Sweet Chia Pudding with Honey

Get a healthy start to your day with this sweet chia pudding with honey. Chia seeds are a natural source of fiber and protein that add a little more heft and texture to yogurt for a more satisfying breakfast.

INGREDIENTS


  • 1/3 cup chia seeds

  • 1/2 cup boiled hot water

  • 3 tbsp Local Hive New England Honey Blend

  • 2 tsp vanilla

  • Sea salt

  • 1 1/2 cups Greek yogurt

  • 1 1/2 cups nut milk (almond, hemp, oat, soy, etc.)

  • Figs, quartered

  • Hazelnuts and almonds, roughly chopped


  • Here are a few other fun ways to dress up chia yogurt in the morning:

  • 1 cup chia-honey-vanilla yogurt base mix

  • 1/2 tsp turmeric

  • 1/2 tsp ginger

  • 1/8 tsp orange zest

  • 1/2 cup mango, cubed

  • 2 dates

  • Coconut flakes, toasted

  • 1 cup chia yogurt base mix

  • 2 tsp raw chocolate powder

  • 1/4 tsp cinnamon

  • 1/8 tsp ancho chili powder

  • 2 tsp maple syrup

  • 1 cup chia yogurt base mix

  • 1/4 tsp ground cardamom

  • Raspberries

DIRECTIONS


  1. Mix chia seeds and ½ cup hot water in a bowl. Let sit for 5 minutes to hydrate the chia seeds.

  2. Stir in vanilla, honey, and a pinch of sea salt.

  3. Add Greek yogurt and nut milk. Whisk to combine thoroughly. This mix will keep in the refrigerator for 4–5 days.

  4. Top with fig quarters, chopped nuts, and another drizzle of honey. Refrigerate at least an hour before serving. (Pro tip: Meal prep for the week by making the chia yogurt the night before. It’ll be cool and ready to go in the morning.)
