Today, we're making cinnamon apple kolaches with our Local Hive Texas Honey Blend. It's got a complex, bold and warm, lingering taste that's smooth like a Southern drawl.
Kolaches are a traditional Czech pastry commonly made with fruit filling. Head to the Texas Hill Country, and you'll find all kinds: sweet, savory, silly, and everything in between.

Cinnamon-Apple Kolaches with Texas Honey
INGREDIENTS
For Honey Kolaches:1 cup whole milk (warmed to about 110 deg F)
1 packet active dry yeast
1 tsp + 1/4 cup Local Hive Texas honey
4 tbsp butter, melted and cooled slightly
1 tsp salt
1 tbsp nonfat milk powder
3 cups bread flour
For Honey Cinnamon Apple Filling:
2 cups apples, peeled and diced
2 tbsp butter
1/2 tsp cinnamon
2 tbsp Local Hive Texas honey
DIRECTIONS
1. In the bowl of a stand mixer, stir together milk, 1 tsp of honey, and yeast. Cover with a towel and allow to sit for 5 minutes or until foamy.2. Add remaining ingredients to the mixing bowl.
3. Use a dough hook to mix everything together for 5 – 7 minutes.
4. Place the dough in a lightly oiled bowl, turn to coat, cover the bowl with plastic wrap, and allow to rise in a warm place for an hour or until doubled in size. While the dough is rising, make your filling.
5. Cook filling ingredients in a skillet over medium heat for about 5 minutes until apples are softened. Set aside to cool completely.
6. Once the dough has risen, deflate the dough and roll into 12 equal balls. Allow the dough to rest for 10 minutes and preheat the oven to 375 deg F.
7. On a cookie sheet, slightly flatten the dough and use a 1/4 cup measuring scoop to make a well in the center.
8. Add about 2 tsp of filling to each kolache.
9. Brush with an egg wash (1 egg + 1 tbsp of water) and bake, 6 at a time, for 15 minutes or until golden with an internal temperature of 190 deg F. Top apple filling with additional honey. Top with honey butter (1 tbsp of honey + 1 tbsp of butter) for some extra yum.
